1 cup butter room temperature
3/4 cup brown sugar
3/4 cup sugar
1 egg
1 teaspoon vanilla
1 and 1/2 all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 and 3/4 cups granola
1 cup raisins
1/2 cup unsalted peanuts
Preheat oven 375. Grease baking sheets
Cream together butter, brown sugar and sugar
Add egg and vanilla and continuing beating until blended
Sift together flour, baking soda and salt
Combine small amounts of wet mixure, flour mixture and granola
Beat after each addition until all is mixed
Continue beating 2 minutes, until batter is well blended
Stir in raisins and peanuts
Place batter in teaspoon sized amounts, 2 inches apart on prepared sheets
Bake until cookies are lightly brown around edges but still soft - about 12 minutes
Loosen with spatula and cool on racks.
