Leek, Potato, Spinach Soup
serves 4
1/4 cup butter
4 cups water, divided
1 cup sliced leeks
1 and 1/2 pounds potatoes, sliced - about 4 medium
6 cups chopped fresh spinach
salt and pepper to taste
In a 3 quart saucepan, melt the butter in 1 cup water
Add leeks, simmer covered, over low heat for 5 minutes
Add potatoes and remaing 3 cups of water
Simmer until potatoes are tender, about 25 minutes
Just before serving, stir in spinach, simmer 5 more minutes
Add salt and pepper
Serve hot
